The Hawksworth Scholarship Dinner at Model Milk

Last night Model Milk was filled with over 100 lucky TD Infinite Privilege cardholders who were treated to a five course fundraiser dinner fit for a king. The event proceeds were donated to the Hawksworth Scholarship Foundation, a national non-profit dedicated to helping young up and coming chefs to get a jump on their careers.

Chefs David Hawksworth ( Hawksworth’s ) and Justin Leboe (Model Milk), took turns behind the line preparing each course that was perfectly paired with the right vino.

We started with canapés. Morel brochette, sweet potato amaze ( which I re-named amaze-cakes- seen in photo ) and oysters casino.

Our first course was prepared by Hawksworth, a scallop and side stripe shrimp ceviche with a light citrus, amaranth and cilantro dressing. It was paired with a 2014 Tantalus Riesling from the Okanagan, BC.

Leboe followed up this delicious start with a dungeness crab salad- delicately prepared with a melon consume, nahm jim and paired with 2013 Lock & Worth Sauv Blanc/ Semillion, Naramata Bench, BC.

To follow, Leboe prepared a line caught sablefish in a tan tan broth served with a rice cake and tai pan. The rice cake has a really nice texture to accompany the fish and made the dish more interesting. I had no idea it was a rice cake until i read the menu. Not exactly your typical Quaker cake. The sablefish was washed down with a 2013 Vincent Careme Vouvray Sec, Chenin Blanc from the Loire Valley France.

For our second entree ( yes- this was truly a grand event! ) we enjoyed a bison striploin prepared by Hawksworth with bacon, chickpea panisse, smoked cauliflower accompanied with a bold red, 2011 Cesconi “Moratel”, merlot/Teroldego/Lagerin from Terino, Italy.

Dessert was one of the best desserts I have ever tasted- thanks Justin Leboe! The only photo I have is of a licked-clean plate, so you’ll have to trust me on this one.
