Kat Florence Hotel has just unveiled the next chapter of its intimate Grand River retreat, and at the centre of the experience is something we’re particularly interested in: a multi-course tasting dinner by one of the hotel’s acclaimed Master Chefs, included every night of your stay.
The catch? You don’t get to choose which chef you’ll experience.
Instead, dinner is designed as a bit of a culinary surprise, with Kat Florence’s rotating roster of internationally acclaimed chefs creating menus inspired by the season, the local landscape and whatever has their attention in the kitchen that day.
So, yes, your dinner is essentially a surprise. And considering the chefs in the hotel’s culinary fleet, that’s a pretty exciting surprise to have waiting for you.

Your Stay Comes With a Star Chef Dinner Every Night
The newest culinary offering at Kat Florence Hotel is all about taking the guesswork out of dinner while making the experience more memorable.
Every night of a guest’s stay comes with a multi-course Chef’s Tasting Dinner, prepared by one of Kat Florence’s rotating Master Chefs.
Rather than ordering from a traditional restaurant menu, guests experience a dinner that changes depending on which chef is hosting, what ingredients are at their peak and what the chef wants to create.
It’s intentionally unpredictable.
You could arrive without knowing exactly what’s going on the plate that evening, sit down and let the chef take it from there… and that’s very much the point.
Kat Florence describes her approach to the hotel’s dining experience as a way of giving chefs room to create something guests couldn’t have planned for themselves.
“I wanted my guests to sit down to something they’d remember long after they left,” Florence says. “That meant finding Chefs who don’t just cook, they tell a story on the plate.”
Meet the Chefs Behind the Surprise
The hotel’s culinary roster is a pretty serious one, bringing together chefs with backgrounds spanning Michelin-starred kitchens, international television, private dining and even royal households.
Chef Anthony Bish
One of the chefs guests may experience is Chef Anthony Bish, who has cooked for royalty and appeared on MasterChef and Iron Chef.
Bish also operates his own private restaurant in Elora, an elevated dining concept created in collaboration with Kat Florence that is exclusively available to hotel guests.
His tasting menus focus on fine seasonal ingredients sourced locally around Elora, with an open-kitchen approach that lets guests watch the chef and his team bring each course to life.
It’s less about a formal restaurant experience and more about feeling like you’ve been invited into someone’s kitchen for a very special dinner.

Chef Dale Mackay
The newest addition to the hotel’s culinary lineup is a particularly big one for Canadian food fans.
Chef Dale Mackay, Canada’s first-ever Top Chef winner, has joined the Kat Florence Master Chef fleet as the private in-residence chef at the new Imperial Jade Manor.
Mackay’s résumé includes working as a head chef for Gordon Ramsay in New York and Japan, serving as Executive Chef for Daniel Boulud’s Dinex Group and becoming the youngest recipient of the Relais & Châteaux Grand Chef designation at the time.
For guests staying at Imperial Jade Manor, Mackay takes on the role of private chef for the residence.

Chef Neill Anthony
Then there’s Chef Neill Anthony, a private chef whose client list has included some seriously famous names.
Anthony has cooked for members of the British royal family, including King Charles and the Prince and Princess of Wales, as well as musicians and celebrities including Elton John, Madonna, U2 and Paul McCartney.
His culinary background includes working alongside chefs such as Gordon Ramsay and Marcus Wareing, as well as years spent in Michelin fine dining.
At Kat Florence, Anthony will create dinners at Don & Kat’s Private Dining Escape, a secluded riverside setting with a terrace overlooking the Grand River.

Chef Marc Collyer
Not every culinary moment at Kat Florence happens at dinner. Chef Marc Collyer, whose career includes nearly 15 years at the Michelin-starred Manor House in the Cotswolds, leads the hotel’s Infinity Patisserie, an all-day edible art experience filled with evolving bonbons, cakes, pastries and other sweets.
The patisserie is exclusively available to hotel guests, meaning you can wander in throughout your stay for something sweet without needing to make a reservation or leave the property.
Collyer also prepares the hotel’s breakfast baskets, which are freshly baked and delivered directly to guest suites each morning.


It’s More Than ‘Just Dinner’
The nightly tasting experience is part of a larger philosophy at Kat Florence Hotel, where many of the experiences you’d normally pay extra for at a luxury hotel are built into the stay.
Guests receive a 60-minute La Mer-infused massage in their suite, access to the hotel’s outdoor Nordic spa, breakfast baskets delivered each morning and unlimited access to the Infinity Patisserie.


There’s also a chilled welcome bottle of Veuve Clicquot Champagne waiting when you arrive.
And now, every evening brings another culinary experience.
The hotel says its rotating menus are intentionally fluid, changing with the seasons and the chefs themselves. That means even returning guests can experience something completely different on a future visit.
Kat Florence Hotel is getting even more exclusive
The new culinary program arrives alongside several other additions to the Elora property.
Beginning September 1, guests can also experience the Kat Florence Reserve, a private 100-acre nature sanctuary along the Grand River and Elora Gorge.
The private reserve is accessible only to selected hotel guests and by invitation, with guided walks, wildlife spotting and luxury picnics designed to keep the experience intimate.


The property is also introducing Imperial Jade Manor, a restored 1870s heritage residence with its own private amenities, including a 60-foot swimming pool and custom stone hot bath beneath the stars.
For guests looking for a stay that’s less traditional hotel and more fully curated escape, it’s another reason the Elora property continues to stand out.


A Foodie Escape Just Outside Toronto
While the hotel’s new Reserve and heritage additions are certainly worth talking about, the nightly Chef’s Tasting Dinner might be the most exciting addition for food lovers.
