On August 1, 2026, Foxy’s [Bar, Restaurant & Bodega] is opening inside the historic Ayrshire Hotel, bringing globally inspired tapas, creative cocktails, and Michelin-acclaimed Chef Miles Pundsack-Poe‘s culinary experience to one of Ontario’s most picturesque getaway destinations.
This opening marks the return home of Chef Miles Pundsack-Poe, a chef whose career has taken him through some of the world’s most celebrated kitchens, including Michelin-recognized restaurants across Napa Valley, Spain, Montreal, and Asia.
Now, after years of cooking through some of the world’s most celebrated kitchens from Napa Valley, to Spain, Montreal, and Asia; he’s bringing those experiences back home to Elora.
Elora’s newest culinary destination comes from a chef with global experience
Chef Miles Pundsack-Poe’s connection to the area actually started long before his international career.
Raised just minutes from where Foxy’s will open, Chef Miles grew up learning about ingredients, growing food, and exploring the connection between land and cooking – experiences that eventually led him to study at Stratford Chefs School and work in renowned kitchens around the world.
His culinary journey has included time at Michelin-recognized restaurants like The Restaurant at Meadowood and The Charter Oak in Napa Valley, Etxebarri and Echaurren in Spain, and Ensue in Shenzhen, China, among others.
But after years spent creating dishes around the globe, the timing felt right to return to Ontario and become part of Elora’s growing food scene.
And it makes sense. Long celebrated for its natural beauty, boutique shopping, and weekend getaway appeal, Elora is also becoming one of Canada’s fastest-growing destinations for chef-driven dining. Acclaimed culinary names have been choosing the small Ontario town to open restaurants, collaborate on pop-ups, and launch ambitious new concepts, and Foxy’s is the latest addition to that growing culinary scene.

Foxy’s brings Spanish-inspired tapas, seafood, and shareable plates to Elora
Inspired by Chef Miles’ years cooking throughout Spain, Foxy’s menu will focus on vibrant tapas, seafood, grill dishes, premium conservas, and specialty ingredients that blend Spanish tradition with local Ontario influences.
The menu is designed around sharing; the kind of meal where you order a few things for the table, linger over wine, and let dinner stretch into the evening.

You can expect dishes including:
- Uni Toasts with Kelp Oil and Lime Zest
- Jamón Croquettes topped with shaved Manchego
- Seabass Crudo with Local Begonia Flowers and Valencian Orange
- Clams with Tomato Sorbet and Celery “Fat”
- Pickled White Asparagus with Boquerones
- 30 Day Aged Grass-Fed Chuleta with Romesco
- Flamed Octopus with Ajo Blanco, Ajo Negro and Chickpea Sofrito
The concept is especially personal for Chef Miles, combining his love for the place he grew up with the flavours and techniques he collected while cooking abroad.
One example is the Cantabrian Anchovy Toast, which takes inspiration from Spain but incorporates local touches, including handmade smoked goat’s butter using wood foraged from the surrounding forest.
It’s that mix of global inspiration and local connection that makes Foxy’s feel very Elora.


Expect cocktails, vintage wines, and a European-inspired atmosphere
Beyond the food, Foxy’s is designed to feel like somewhere you’d happily spend an entire evening.
The cocktail program takes inspiration from European cocktail lounges, with creative drinks designed to complement the menu. Guests can expect options like Las Olas with pisco, sherry, melon, salted honey, and milk clarification, the Cielo Paraiso with lime leaf tequila and coconut, and the Sombra de Cola featuring whiskey, maple cola house mix, citrus, and vermouth.
During the summer months, Foxy’s will also offer a limited-edition Cereza Negroni frozen cocktail for patio season.


Inside, the space leans into a moody European-inspired aesthetic with rich gem tones, leather and velvet textures, curated art, and glowing lighting details; including a cocktail cherry-inspired feature in the historic flatiron corner of the building.
Outside, the patio on Geddes Ave. will offer another way to enjoy Elora’s summer evenings with cocktails, dinner, and views of the surrounding town.
