If you needed an excuse for a spontaneous foodie date this weekend, here it is: Tony’s Sourdough Pizzeria in Elora is teaming up with Michelin-starred Hexagon Restaurant’s Chef Rafael Covarrubias for a one-of-a-kind collab menu that’s only available Thursday, September 18 through Sunday, September 21.
Chef Rafa and Chef Tony Bish (yes, the same Tony you’ve seen on Iron Chef and Master Chef) are firing up six limited-edition pizzas that take wood-fired sourdough to a whole new level. Tony’s already sells out of their 100 pies a day since opening earlier this summer, so you know this four-day-only lineup won’t last long.


so what’s on this collab menu?
The chefs dreamt up six seriously creative pies you’ll want to share (or not share, no judgment) on your next date night.
The first pie is Esquites, made with Mexican street corn, Cotija, Chiltepin chili, and nduja sausage.
Next, they’ve created the Pigstachio of Prosciutto chicharron, Sicilian pistachio, mascarpone, honey.
The Matsutake Mushroom has Taleggio crema, caramelized shallot, brown butter, tarragon.
Hilariously-named Braise Be is made with 24-hour braised short rib, fontina, roasted potato chips, crème fraîche, demi-glace, and chives.
Miso Crabby has a Miso rose sauce, jumbo lump crab, beef bacon, dill aioli, katsuobushi; and the Truffle & Flame with Smoked aubergine, ricotta, tahini, mint, parsley, pomegranate, truffle chili crunch.
How delicious do all these sound?! You really can’t go wrong It’s basically six different excuses to plan a road trip out of the city.
