Tony Bish isn’t your average pizzaiolo. He’s a world-travelled fine dining chef who’s cooked for the Royal Family of Thailand, competed on The Next Iron Chef, judged Master Chef, and trained in kitchens across Bangkok, Hong Kong, Brisbane, New York, and Phuket.

Now, he’s set up shop in the heart of Ontario’s gem, Elora, inside the charming historic Elora Mews.

Tony brings with him more than just credentials; he brings a love for process, family, and a dough that’s been passed down for generations. His sourdough starter recipe was born from his grandma’s kitchen and perfected over years of obsession, literally rolling 100 dough balls a day to nail the method.

There’s also a single, perfectly executed meatball on the menu, called The Don, because of course it is.
